Fresh Black Winter Truffles
shave them over pasta for a romantic
meal at home

 
Celebrate Valentine's Day with a romantic and simple Valentine's recipe, made with Fresh Black Winter Truffle and pasta.
Ingredients:
 fresh black Winter truffles 
2 tablespoons extra-virgin truffle olive oil 
1 tablespoons butter
1 pound fresh fettuccine or Tagliatelle pasta
Parmesan or Pecorino Romano cheese
Salt & pepper…and the most important ingredient:
love
Mince half of the truffles; set aside.
Preparation: 
Heat the oil and butter in a large frying pan over medium heat until the butter foams. Add the minced Fresh winter truffles, and cook, stirring often, until fragrant, about 1 minute. Remove the pan from heat and set aside.
 
Cook the pasta, and transfer directly into the reserved frying pan. Add one ladle of cooking pasta  water into the pan and toss over medium heat until the sauce thickens slightly.
 
Remove the pan from heat, add the cheese, and toss until the pasta is well coated. Taste and season with additional salt and black pepper as needed. Serve and  slice the remaining truffles over the pasta.
